Adaptations alimentaires au changement climatique et impacts sur la qualité du lait et des fromages sous appellations bovines et caprines

Résumé

Le changement climatique affecte toutes les productions agricoles dont l’ élevage laitier. L’ adaptation de l’ alimentation des animaux est un des leviers fortement mobilisés, ce qui, en France, interroge particulièrement les filières sous Indications Géographiques (IG). Valorisant les spécificités de leurs terroirs, des sols jusqu’ aux produits finis, elles ont besoin d’ objectiver les intérêts et les risques d’ utilisation de nouvelles espèces fourragères, d’ un point de vue agronomique, zootechnique, technologique et organoleptique. À ce jour, différentes études ont testé en fermes expérimentales le pâturage de chicorée par les bovins, et le pâturage par les caprins de chicorée, plantain, sorgho, mûrier blanc et frêne. Si quelques écarts de valeurs alimentaires et de compositions physico-chimiques des laits ont été constatés, les produits finis n’ ont pas présenté de différences organoleptiques significatives. Ces approches apportent des nouvelles références techniques aux filières pour définir un cadre d’ utilisation de ces espèces fourragères en cohérence avec leurs valeurs.

Abstract

Adapting animal feed is one
of the most widely used levers, which, in France, raises
particular questions for sectors under Geographical
Indications (GI). By promoting the specifi c characteristics
of their terroirs, from the soil to the fi nished products,
they need to objectively assess the benefi ts and risks of
using new forage species from an agronomic, zootechnical,
technological and organoleptic point of view. To date,
various studies have tested the grazing of chicory by cattle
and the grazing of chicory, plantain, sorghum, white
mulberry and ash by goats on experimental farms. Although
some diff erences in nutritional values and the physical
and chemical composition of the milk were observed, the
fi nished products did not show any signifi cant organoleptic
diff erences. Th ese approaches provide new technical
references for the industry to defi ne a framework for the use
of these forage species in line with their values.
